Recipe: Caprese Salad (sorta)

The other day while I was grocery shopping I found these bocconcini cheese.  I had never heard of them, but I thought they sounded good. I came up with this salad.

2 tomatoes, chopped
3-4 leaves fresh basil, chopped fine (I cut mine with scissors)
1 pkg bocconcini cheese

Mix all ingredients together.  Drizzle with balsamic vinegar.  Let stand for a bit for the flavors to merge.

  1. If you want a different flavor, try drizzling with a little walnut oil instead and forego the basil. :)
